Instructions

  • Season the pork chops on both sides with garlic powder, paprika, salt, and black pepper.
  • Turn on the Instant Pot and select the 'Saute' setting.
  • Wait for the olive oil to heat up.
  • Sear pork chops on both sides for about 3 minutes per side, or until brown.
  • Take the pork chops out of the Instant Pot.
  • Scrape the bottom of the Instant Pot to remove any browned bits before adding the chicken broth.
  • Return the pork chops to the Instant Pot and close the lid.
  • Set the valve to the "Sealing" position.
  • Set the timer to 8 minutes on high pressure and press the 'Manual' button.
  • Make the mashed potatoes while the pork chops are cooking.
  • Boil potatoes in a pot for about 15 minutes, or until tender.
  • Drain the potatoes and combine them with the butter, sour cream, salt, and black pepper.
  • Potatoes should be mashed until smooth.
  • When the cooking time is up, allow the pressure to naturally release for 10 minutes.
  • Then, to relieve any remaining pressure, turn the valve to the 'Venting' position.
  • Remove the pork chops from the Instant Pot and set aside.
  • Mash any remaining potatoes in the Instant Pot with the milk until smooth.
  • Pork chops should be served with mashed potatoes and corn.
