This Instant Pot Butter Chicken with Tofu and Rice recipe is a delicious and simple way to enjoy traditional Indian flavors. Cooked in a rich tomato sauce with aromatic spices, the tender chicken and tofu are served over fluffy basmati rice. A dollop of creamy Greek yogurt and a sprinkle of fresh cilantro round out the dish. This recipe is ideal for busy weeknights or whenever you want a hearty and filling meal.

  • Cook Time: 25 minutes
  • Total Time: 40 minutes

Instructions

  • In a fine-mesh sieve, rinse the basmati rice until the water runs clear.
  • Add the rice and 1 1/4 cup water to the Instant Pot.
  • Close the lid and turn the pressure release valve to the Sealing position.
  • Cook for 5 minutes on high pressure, then let the pressure naturally release for 10 minutes.
  • After 10 minutes, manually release any remaining pressure and remove the lid.
  • Turn the Instant Pot to Sauté mode while the rice is cooking.
  • Allow the butter to melt.
  • Cook for 2-3 minutes, or until the onion is soft.
  • Cook for 1 minute more after adding the garlic.
  • Stir the chicken and tofu together with the onion and garlic in the Instant Pot.
  • Combine the diced tomatoes, garam masala, cumin, coriander, paprika, turmeric, salt, and cayenne pepper in a large mixing bowl.
  • To combine, stir everything together.
  • Close the lid and turn the pressure release valve to the Sealing position.
  • Cook for 10 minutes on high pressure, then let the pressure naturally release for 5 minutes.
  • After 5 minutes, manually release any remaining pressure and remove the lid.
  • Incorporate the heavy cream and Greek yogurt.
  • Garnish the butter chicken and tofu with fresh cilantro and serve over rice.
