Instant Pot Pork Chops with Potatoes and Mushrooms Recipe

These Instant Pot pork chops with potatoes and mushrooms are a hearty and delicious weeknight dinner. The pork chops are seasoned with garlic, onion, and smoked paprika, then seared to perfection before being cooked in a savory chicken broth with tender baby potatoes and flavorful mushrooms.

  • Prep Time: 15 minutes
  • Cook Time: 13 minutes
  • Total Time: 28 minutes

Instructions

  • Garlic powder, onion powder, smoked paprika, salt, and black pepper season both sides of the pork chops.
  • Turn on the sauté function on the Instant Pot and add the olive oil.
  • 3 minutes per side, sear pork chops on both sides until browned.
  • Set aside the pork chops from the Instant Pot.
  • Sauté the potatoes and mushrooms in the Instant Pot for 2-3 minutes.
  • Pour in the chicken broth and scrape any browned bits from the bottom of the Instant Pot with a wooden spoon.
  • On top of the vegetables, place the pork chops.
  • Seal the Instant Pot and set the timer for 8 minutes on high pressure.
  • Allow the Instant Pot to naturally release for 5 minutes after the cooking time is finished before manually releasing any remaining pressure.
  • Enjoy the pork chops with the vegetables.
