This Instant Pot Curry Chicken with Rice recipe is a tasty and simple way to prepare a flavorful and filling meal. It's ideal for a cozy weeknight dinner or meal prep for the week ahead, with a blend of warm spices and tender chicken.

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Instructions

  • Set the Instant Pot to sauté mode and pour in the olive oil.
  • When the pan is hot, add the chicken and brown it for 2-3 minutes.
  • Cook for another 2-3 minutes, or until the onion and garlic are softened.
  • Cook for 1 minute, or until the curry powder, ginger, turmeric, cinnamon, and cayenne pepper are fragrant.
  • Stir in the diced tomatoes and chicken broth to combine.
  • Stir in the basmati rice and water to combine.
  • Set the valve to sealing and close the Instant Pot lid.
  • Set the timer for 10 minutes and press the manual pressure cook button.
  • When the timer goes off, allow the pressure to naturally release for 5 minutes before releasing any remaining pressure.
  • Season with salt and pepper to taste after adding the cilantro.
  • Serve immediately and enjoy.
